I’m not sure what it is about this size in particular that cultivates such possessive habits from its owners. I’ve heard stories of past clients squirreling away their No.8 wrapped in towels, hidden in some secret cabinet. They told others not too use it, not to look at it or even think about their No.8 because they perfected the seasoning and built such a strong bond to THEIR skillet! The secret cabinet is a bit much in my opinion, but live and let live right?

Carbon steel allows an even distribution of heat while easily establishing a nonstick seasoning faster than cast iron.
